Soil work in the vineyards includes various essential tasks to ensure high-quality production: weeding, plowing or hand-picking, subsoiling, grassing, organic additions...

Work on the vine
From the birth of the first buds to the eagerly awaited harvest, Andrea performs meticulous work,
dictated by his experience and knowledge of the vine and its specific needs:
uprooting, planting, pruning, clipping, de-budding, tying, trellising, de-budding, fertilization,
phytosanitary treatment, thinning of clusters...

Harvest
At Château, the harvest is done exclusively by hand, respecting the vine and its fruits. Our harvesters carefully select the bunches on the vine and use different transport methods depending on the plots. Generally, we use a harvest bin, but for the Fleurie plot, harvesters use 15 kg crates.
This meticulous handling aims to preserve the integrity of the berries, minimizing any excessive crushing.
Beyond the harvest, it is an eagerly anticipated celebration, where conviviality reigns among the rows of vines full of promises.

In the cellar
In the cellar, winemaking is approached with simplicity and rigor, in harmony with the work done throughout the year, respecting the fruit and its potential:
- Sulfiting of wines reduced to a strict minimum or nonexistent, with the goal of preserving their purity and natural expression.
- Management of the stems according to the vintages to ensure structure, concentration, and complexity of each wine.
- Fermentation at low temperatures
- Aging in tanks and barrels to create different blends and enhance each vintage in a unique and authentic way.
